How long would you take to roast?
This is very much a hobby so I try to do it when I have free time to keep the passion alive 🙂
So far it’s worked well enough to say “within a week”, but if life comes in the way it could extend a bit longer. Typically I’d like to do a whole bunch of bags in one go – typically over a weekend and then pack/ship at the start of the week.
What’s the best approach to enjoy these coffees?
First thing: let them rest. If you open them early, there’s usually a significant dip in flavour between weeks 1 and 3, so I tend to avoid that period completely. I normally open a bag after 4 – 6 weeks, and from there it just gets better.
On brewing, I’d start with water since it has the biggest impact on how the cup shows up. I’m a fan of low mineral water and usually use around 40 – 60 ppm (currently playing with 30/10 + 10 ppm sea salt) for bright, clean cups. If you’re already using Aviary or 1/3 TWW, that would work fine too.
My go-to recipe is 12 g coffee to 200 g water using a v60 with Abaca red filters, using four high-agitation pours (30/90/150/200). I usually aim for a total brew time around 2:30 for a clear, lively profile with my Pietro grinder. Water temp sits in the 90 – 93 °C range depending on the coffee.
If your brews are running slow or if you just prefer the flavour balance from a finer grind, you could drop to 3 pours (50/135/200) and bump the water temperature up by 1 – 2 °C. Let your tastebuds guide you!
Coffees disappear really quickly, will they come back or are they gone forever?
If you see a coffee on the main store page but out of stock, it means that it most likely will be back in stock in the next drop. But if its been moved to the “Previous Releases” page, then its most likely gone (but making space for something newer!)
How do you come up with your tasting notes?
When I get a new coffee, I taste the first roasts by brewing them right after and put down my initial notes on paper. These notes can change a bit with rest, so dont take it as an absolute truth but an indication of the experience you can expect while drinking a coffee.
Same goes for the funk level, its something im working on to quantify better and i notice it can change with rest.
What’s the deal with the artwork on the coffees?
The point of the coffee cards is to show you a coffee’s vibe – notes, funk, etc. at a glance, so you only click to add to cart 🙂
They were feeling dull, so my wife suggested I use my painting hobby. I ran my paintings + the coffee descriptions through an AI tool to generate several visual versions that I eventually pick from.
Someday I’ll swap in original paintings for each coffee but this is just a creative experiment for now.
Shipping prices seem on the higher side for some countries..?
I havent figured out pricing for each country (and automation/etc) so I put in a flat rate and will refund the difference based on what the actual cost is 🙂
